Kerala style egg roast
Egg roast is a flavorful dish where hard-boiled eggs are typically cooked in a spiced and aromatic tomato-based gravy. Ingredients (egg curry)
Egg – 6 nos
Onion – 3 or 4 nos
Green chilli – 3 to 4 nos
Ginger – 1 nos
Garlic -8 to 9 nos
Curry leaves – 2 to 3 sprigs.
Tomatoes – 1 nos
Red chilli powder -1 tbsp
Coriander powder – 1 tbsp
Red chilli powder – 1 1/2 tbsp
Garam masala – 1 tbsp
Pepper seed – 1 tbsp
Mustard seed – 1 tbsp
Salt – 1 or 2 tsp
Oil – 3 to 4 tbsp
Preparation of egg roast recipe
In a pan / kadai add the water, salt and egg to a boil.
Drain boiled eggs and put in a bowl filled with cold water .
Then crush the pepper ,ginger and garlic ,set aside.
Deshell the boiled eggs and keep aside.
Heat oil in a pan,add mustard seeds and let them cracle.
Add dry hot red chilli and saute them well.
Then add crushed ginger ,garlic and pepper seed .
Saute them well for few minutes.
Then add curry leaves and green chilli ,saute them well.
Then add chopped onion and saute till onion become transluent
Sprinkle some salt and saute them well.
Then add turmeric powder ,red chilli powder, coriander powder and garam masala .
saute them until when the raw smell of the spices completely disappears.
Then add finally chopped tomatoes and saute them well.
Pour some water over them and thoroughly mix them .
Cover and cook them well.
Add boiled eggs and mix with masala .
Cook for 4 to 5 minutes.
Take the pan off from the heat and set it aside and roasted eggs transfer to a bowl.
Serve the tasty egg roast with roti.
