Bawarchi biryani
Bawarchi biryani is a famous biryani dish which organites from Indian biryani it had a delicious taste and made with ingredients like rice ,cloves garlic ginger lemon black, Cardamom & green cardamom ,ghee……..etc. (bawarchi biryani atlanta)
Ingredients. (bawarchi biryani atlanta)
Tomatoes sliced 3 medium
Green chilli
Garlic sliced 6-7 cloves
Ginger- 1 inch piece
Lemon juice -3 tbsp
Onion fryed ½ cup
Water as required
Star anise -1
Mace blades 2-3
Nutmeg ¼ piece
Cinnamon sticks 2
Green cardamom 4-5
Black Cardamom -1
Cloves 5-6
Cumin seeds -2 TSP
Fennel seeds -1 TSP
Corainder seeds -1tsp
Carom seeds -1 TSP
Chicken mix boti 750 g
Vinegar -1 tbsp
Salt 1&½ tbsp
Rice 500g – soaked for 3o mins
Cooking oil ½ cup
Corainder powder -2 TSP
Red chilli powder -1 TSP
Turmeric powder -½ TSP
Garam masala powder -1 TSP
Salt – 1 TSP or to taste
Cumin seeds 1 tbsp
Cardamom powder 1 TSP
Mint leaves chopped 1-2 TbSP
Fresh Corainder chopped 1-2 tbsp
Yogurt whisked ½ cup
Kewra water 1 tbsp
Biryani masala 1 & ½ tbsp
Mint leaves chopped 2-3 tbsp
Fresh Corainder chopped 2-3 tbsp
Onion fryed 2-3 tbsp
Dried plum 5-6
Boiled rice
Orange food colour ¼ TSP
Directions (bawarchi biryani atlanta)
1.In a chopper add tomatoes, green chillies, garlic, ginger, lemon juice, and fryed onion,chop we’ll & set aside
2.In a pot add water and heat it
3.Add star anise,mace, nutmeg, cinnamon sticks, black Cardamom, green cardamom, cloves, cumin seeds, Fennel seeds, Corainder seeds,carom seeds,& mix well
4.Add chicken & mix well,bring it to boil & cook for 5-6 mins take out chicken pieces for later use
5.now take out all spices from stock & discard it
- In stock add vinegar,salt and mix well
7.add rice & boil until ¾ th done then strain & set aside
- In a pot add cooking oil , ground paste ,mix well cook for 2-3 mins
9.Add Corainder powder,red chilli powder, turmeric powder, Garam masala powder,salt, cumin seeds,& cardamom powder,mix & cook for a minute then cover & book on low flame 4 to 5 mins
10.Add reserved chicken & mix well
11.Add mint leaves,fresh Corainder & mix well
12.Add yogurt & mix well
13.Add kewra water,mix well & cook for 2 mins
14.Add biryani masala & mix well
15.Add mint leaves ,fresh Corainder,fryed onion , dried plums , boiled rice,& sprinkle orange food colour on top ,cover & steam cook on low flame for 15- 20 mins
