Russian honey cake is a popular delicious cake it is known as Medovik cake it is a traditional and beloved dessert in Russia and western European cuisine 

Medovik honey cake is originated in 19 th century in the period of Alexander 1 of Russia 

This cake made by honey, flour, eggs and sugar ,butter, sour cream, baking soda 

 

This Medovik honey cake has serval variations by using different types of cream and adding nuts , fruits,or spices to the layers or filling

Ingredients

 

 

  • ¾ cup / 150 grams of sugar 
  • 100 grams of unsalted butter 
  • ⅓ cup /80 grams of honey
  • 3 eggs
  • 1 tsp of vanilla essence 
  • 1 tsp of baking powder
  • 4 & ½ cups (450 grams) of all purpose flour/maida
  • 350 grams (1&½ cup) of sour cream into a bowl 
  • ½ cup / 50 grams of icing sugar
  • 1tbs of honey
  • 1 and ¼ cup of whipping cream

 

Directions  for Medovik / Russian honey cake

 

  • Place a oven safe bowl on double boiler 
  • Add 150 grams of sugar (3/4 cup)
  • Add 100 grams of unsalted butter 
  • Add ⅓ cup /80 grams of honey 
  • Cook on medium heat until butter melts
  • Add 3 eggs
  • Whisk it well 
  • Remove from heat and whisk it well 
  • Add 1 tsp of vanilla essence 
  • Add 1 tsp of baking powder 
  • Mix it well 
  • Gradually add 4 & ½ cups (450 grams) of all purpose flour/maida 
  • Mix it well 
  • Add some extra flour and,if the dough is too sticky 
  • Divide them into 8 equal portions 
  • Take each portion and roll into a thin sheet on parchment paper 
  • Cut into round shape by round plate/ knife 
  • Keep the leftover for later use
  • Place it in a bakery tray
  • Prick it with fork
  • Preheat oven at 180°Degrees Celsius 
  •  (10 mins) 
  • Bake for 7 to 8 minutes at 180° degree Celsius 
  • Now it’s perfectly baked,let it cool completely 
  • Continue the process of remaining dough 
  • Take leftovers and bake for some time and temperature 
  •  Let them cool completely 
  • Blend into a powder and keep aside 
  • Now add 350 grams (1&½ cup) of sour cream into a bowl 
  • Add ½ cup / 50 grams of icing sugar 
  • Mix it well 

Medovik / Russian honey cake

  • Add 1tbs of honey 
  • Mix it well 
  • Take 1 and ¼ cup of whipping cream 
  • Beat until it reaches to stiff peaks 
  • Add sour cream mixture 
  • Mix on low speed for few seconds 
  • Take each sheet and spread a dollop of cream 
  • Place another sheet and continue the process until all sheets are done 
  • Sprinkle cake crumbs on all over the cake 
  • Chill it in fridge for 12 hours 
  • After 12 hours slice and serve
